ahahah, ok,
you use watakushi in a strict way to say I, (on meeting etc)
hiragana is a usual way to write something, kanji is formal.
katakana is often used for advertising or english words in japanese (computa etc)
to write san in hiragana is more usual.
that is what I remember,

Watakushi is for really formal situations. If you use it in everyday conversation, people will think you are weird.
How much kanji to use and how much hiraga changes depending on different people. I personally use Kanji moderately.
Katakana can be used for emphasis, and also for words that were borrowed from other languages, like pizza for instance.

Well apart from everything that was said, I do think that kanji writing depens on your level of japanese. I mean you can write all the words that use Kanji in a normal way if you know them well... as for Katakana san, I have never seen it. Just write it in hiragana since its a japanese word, katakana is used for words that come from outside of japan, like computer .... konpyu-ta- コンピュ-タ-

Upss... weird well it was konpyuta in katakana so there is no much problem . Plus be sure to use watakushi in really formal situations, if you use it with a close friend it will sound weird, if you know a person a lot you use Boku

Watakushi = serious business

Hiragana is the basis of the language. The kanji is used for faster reading/formality.

San is rarely spelled in katakana, unless maybe it is part of a nickname.
