When I refer to a shows watch-ability I am almost always talking about it's re-watch-ability. How often can you re-watch a TV episode and be entertained by it. Most TV shows can be enjoyed at least twice, once new and a second time more critically. While shows like Grey's Anatomy and Lost are two of my favorite shows, the watchability is somewhat loew becuase I find it hard to watch any episode out of seasonal order and enjoy it. While this is not uniform, it is the case a magority of the time. Shows like SVU, CSI, NCIS, have high-watchability predominatly because characters are consistent and there are very few or unimportant series arcs. When it comes to a seasons watchability, Lost, Grey's, Avatar out-measure the big letter shows, but very few people have the time to sit down and watch a whole season and enjoy it. Star Trek episodes have some of the greatest watchability of any shows in TV history. Episodes can be watch over and over and enjoyed. It is the fundemental differeance between round-character driven shows and basic platform oriented shows that dictates watchability in my eyes.
