    Actually, while the Hulk becomes stronger as he gets angrier, he doesn't actually change in size by more than a few inches. Ang Lee invented that idea as a visual way to show Hulk getting stronger, and in my opinion it wasn't adequately explained or pulled off very well. The official Marvel listing of the Hulk shows his height as follows:

    Height
    5' 9½" (Banner); 6'6" (gray Hulk); 7' – 8' (green/savage Hulk); 7'6" (green/Professor Hulk)

    The biggest change is the green Hulk who varies by a foot (between 7 and 8 feet tall). Even this, I think, is just showing that the Hulk has looked different at different times. In other words he may have been 7 feet tall in issues 78-125, but in the 300s he's closer to 8 feet tall because there is a different artist and a different writing staff.

    Besides, the growth they showed in the first film was ridiculous. In some scenes it looked like he was about 25 feet tall (see the scene when Betty turn on her car's headlights and the Hulk is in front of her, almost as tall as a tree).
